Ingredients
- 1 tsp olive oil
- ½ small brown onion, finely sliced
- 1 tsp garlic
- 250 g baby spinach
- 4 eggs
- ½ cup crumbled feta cheese
- Salt and pepper to taste
Method
- Preheat your grill to medium high heat.
- Heat olive oil in a non stick frying pan over medium heat.
- Add the onion and cook until lightly browned.
- Add the spinach and cook for 1 to 2 minutes until wilted. Remove from heat and allow to cool.
- In a bowl, beat the eggs. Stir through the cooled spinach mixture and feta. Season to taste.
- Return the pan to medium heat and pour in the egg mixture.
- Gently stir until the base starts to set, then turn off the heat while the top remains slightly runny.
- Place the pan under the grill for 2 to 3 minutes until golden and fully cooked.
- Carefully invert onto a plate and serve warm or cold with a fresh side salad.
