Lemon Chicken Pasta

This creamy lemon chicken pasta is a comforting, family-friendly meal with a light citrus finish. Tender chicken breast is combined with pasta and coated in a smooth lemon cream sauce that delivers flavour without being overpowering.

The recipe can be easily adapted using gluten-free pasta or dairy-free alternatives, making it suitable for a variety of dietary needs. With simple ingredients and minimal preparation, it’s an ideal option for busy weeknights while still feeling nourishing and satisfying.

Ingredients

Pasta

  • 12 ounces gluten-free pasta
  • 2 chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil
  • Fresh parsley, finely chopped (to serve)

Lemon Cream Sauce

  • 1 tablespoon olive oil
  • ½ medium yellow onion, finely minced
  • 4 cloves garlic, finely minced
  • ½ cup chicken stock
  • ½ cup grated parmesan cheese
  • ½ cup heavy cream (or dairy-free alternative)
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • Zest and juice of 1 lemon

Method

  1. Cook the pasta according to packet instructions. Drain and toss with a small amount of olive oil to prevent sticking.
  2. Lightly pound the chicken breasts to an even thickness and season with salt and pepper.
  3. Heat olive oil in a pan over medium heat and cook the chicken until golden and cooked through. Remove from the pan and slice.
  4. In the same pan, sauté the onion and garlic until soft and fragrant.
  5. Add chicken stock and gently simmer. Stir in parmesan, cream, lemon zest and juice, salt and pepper.
  6. Add the cooked pasta and sliced chicken to the sauce and toss until evenly coated.
  7. Serve warm, garnished with fresh parsley.

Tips

  • Use gluten-free, whole wheat or regular pasta depending on preference.
  • Add extra vegetables for nutrition:
    • Spinach – stir through just before serving
    • Broccoli – finely chopped and cooked with the onion
    • Bell peppers – sauté with the onion
    • Asparagus – chopped and added with the onion
  • For a lighter option, reduce the cream slightly and increase the chicken stock.
