It’s quick to put together and easy to customise depending on what you have on hand. Serve it as a pre-dinner snack, for relaxed entertaining or when you simply feel like creating something a little more interesting than your usual afternoon snack.

Ingredients

  • 1 hard cheese, such as goat gouda
  • ½ cup almond milk, mixed with 2 teaspoons honey and a pinch of sea salt
  • 1 red apple, thinly sliced
  • ¼ cup blueberries
  • ¼ cup blackberries, or other berries of your choice
  • 6–8 green olives
  • 6–8 black olives
  • ¼ cup almonds
  • ¼ cup pecans
  • Gluten-free almond flour crackers
  • Gluten-free oat crisp crackers
  • Dark chocolate squares, 1–2 per person

Method

  1. Choose a large, flat serving tray, platter or plate.
  2. Place the cheese and almond milk mixture on the tray, using a small bowl for the almond milk mixture.
  3. Arrange the sliced apple, blueberries and blackberries around the tray.
  4. Add the green and black olives, using small bowls or dishes if desired to create height and variation.
  5. Fill the remaining spaces with almonds, pecans and gluten-free crackers.
  6. Finish with a few squares of dark chocolate and serve immediately.
