Fudgy Gluten Free Brownies

Gluten free brownies are a simple, comforting treat for anyone who loves a rich chocolate dessert with a soft, gooey centre. These brownies are dairy free as well, with a crinkly top, fudgy texture and plenty of chocolate flavour.

They are perfect for afternoon tea, lunchboxes, family baking or sharing with friends. As always, make sure you check the labels on your gluten free flour, cocoa powder, dairy free butter and chocolate chips to ensure they suit your dietary needs.

Ingredients

  • 170 g dairy free unsalted butter, melted
  • 200 g caster sugar
  • 90 g brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 40 g gluten free cocoa powder
  • 70 g gluten free all purpose plain flour
  • 75 g dairy free milk or dark chocolate chips

Method

  1. Preheat the oven to 180°C, or 160°C fan forced. Grease and line a 20 cm square baking tin with baking paper, leaving two sides overhanging so the brownies are easier to lift out once cooled.
  2. Add the melted dairy free butter, caster sugar and brown sugar to a large mixing bowl. Gently whisk until combined.
  3. Stir through the vanilla extract.
  4. Add the eggs one at a time, mixing gently between each addition.
  5. Sift in the cocoa powder and gluten free flour. Stir until just combined, being careful not to overmix.
  6. Fold through the dairy free chocolate chips.
  7. Pour the brownie mixture into the prepared tin and smooth the top.
  8. Bake for 30 to 35 minutes, or until the brownies no longer wobble in the centre. They should still look fudgy and soft.
  9. Leave the brownies in the tin and place on a wire rack to cool completely.
  10. For cleaner slices, chill the brownies in the fridge for 1 hour before cutting into squares.

Serving Suggestion

Serve these brownies on their own, with fresh berries or with a scoop of dairy free vanilla ice cream for a simple dessert.

Gluten free flour blends can vary between brands and countries. This recipe was originally made using White Wings All Purpose Gluten Free Flour. For best results, choose a gluten free plain flour blend designed for baking.

Always check that your chocolate chips, cocoa powder and dairy free butter are labelled gluten free and dairy free if you are preparing this recipe for someone with allergies or coeliac disease.
