Looking for a simple gluten free dessert that feels a little special? This Forest Fruits Clafoutis is made with juicy mixed berries, creamy coconut milk and warming cinnamon for a comforting bake that is easy to prepare and perfect for sharing.
Serves: 6 | Prep time: 15 minutes | Cook time: 45 minutes | Total time: 1 hour

Ingredients
- 500ml frozen Black Forest fruits, thawed
- 5 to 6 tbsp golden caster sugar
- 15g dairy free spread
- 85g gluten free plain flour
- ½ tsp ground cinnamon
- 4 eggs
- 400ml coconut milk
- 3 tbsp blackcurrant or red fruit squash
- ½ tsp arrowroot (blended with a little water)
- Icing sugar, to dust
Method
- Preheat oven to 200°C (180°C fan). Drain the fruit, reserving the juice.
- Toss the berries with 1 tbsp of sugar, then spread evenly into a greased 24cm ovenproof dish.
- In a bowl, sift together the flour and cinnamon. Stir in the remaining sugar.
- In a separate jug, whisk together the eggs and coconut milk.
- Gradually whisk the wet mixture into the dry ingredients until smooth.
- Pour the batter gently over the fruit.
- Bake for 40 to 45 minutes, until set and lightly golden.
- Meanwhile, heat the fruit juice with the squash in a small pan. Stir in the arrowroot mixture until slightly thickened to form a coulis.
- Dust the clafoutis with icing sugar and serve warm, drizzled with the coulis.
Tips
- You can swap frozen berries for fresh when in season
- Serve with coconut yoghurt for an extra creamy finish
- Best enjoyed warm, but also delicious chilled the next day
